Bite-sized Ravasaki

Try my bite-sized Ravasaki recipe (not to be confused with Saganaki!) – the crispy, melt-in-your-mouth Greek cheese bites that are even more irresistible and perfect for sharing. Get ready for a crunchy, moreish treat that's bound to be a crowd-pleaser!

 

Ingredients

  • 8 sheets of filo pastry, cut in half

  • Approx 3-4 tbsp olive oil (plus approx 50ml olive oil for shallow frying)

  • 1 block of feta (cut into 16 small chunks

  • 50g honey

  • 2-3 tsp sesame seeds

20 mins to prepare and make | Makes 16


Method

  1. Lay out the filo pastry sheets. Taking one, brush olive oil on top.

  2. Place the small chunk of feta cheese in the middle and fold the filo pastry sheet like you’re wrapping a parcel. Repeat this process with the rest of the feta chunks and filo pastry sheets.

  3. Heat up the additional olive oil in a frying pan over a medium to high heat. After a minute, add the parcels and fry on both sides for 1-2 minutes until golden and crispy.

  4. Place the crispy parcels on a plate lined with kitchen roll to absorb the excess oil. Then remove and serve with honey and sesame seeds on top.
