Ingredients
Barley rusks
Grated beef tomatoes
Feta cheese
Olive oil (I recommend using @topika.oliveoil )
Dried oregano
Optionally: capers / black olives
What is Barley Rusk?
Barley rusks, known as "paximadia" in Greek, are twice-baked, hard, and crunchy bread made from barley flour. They have a deep, nutty flavour and are a staple in Cretan cuisine. Before serving, they are typically softened with water, olive oil, or tomato juice to create the perfect base for Dakos.
Method
Lightly dip the barley rusks in water to soften them slightly. Be careful not to soak them too much.
Grate the beef tomatoes and spoon the grated tomato over each rusk.
Drizzle generously with olive oil and crumble the feta cheese over the top.
Sprinkle with dried oregano, salt, and pepper to taste.
