Biftekia Gemista

Just when I thought Biftekia couldn’t get any better, I try them out this way — stuffed with Kefalotyri for the ULTIMATE burger 😮‍💨

And if you’ve tried out my recipe before, you’ll know just how delicious they are… EVEN MORE so this way. As if that was even possible 👏🏻

 

Ingredients

1 red onion, grated or finely chopped

Handful of fresh parsley (approx 30g), chopped

Handful of fresh mint (approx 30g), chopped

1 medium egg

100g breadcrumbs

500g beef mince (I used 25% fat)

2 tsp dried oregano

Salt and pepper to taste

10-12 small cubes of Kefalotyri or Parmesan as a substitute

200ml oil for shallow frying (vegetable oil or olive oil)

30 minutes prepare | Yields 10-12 burger patties


Method

  1. Start by grating the red onion or blitzing and add to a bowl. Then finely chop the fresh parsley and mint and add to the same bowl.

  2. Add the egg, breadcrumbs, beef mince and seasoning along to the bowl and mix until well combined.

  3. Take about a tablespoon of the mixture and flatten. Then place a cube of the Kefalotyri in the middle, and roll the mince into a ball to cover. Smooth the edges using the palm of your hand to form a flat burger shape. Repeat this with the remaining mince meat.

  4. Add the crumbled feta, fresh dill, salt and pepper, and a tbsp of olive oil. Mix everything together until well combined.

  5. Over a high heat, add the olive oil to a frying pan. After 2 minutes, or until it’s heated up (you can test this by poking a wooden spoon in the oil and seeing if it fizzes up around it), carefully place the burgers.

  6. Cook for 3-4 minutes on both sides (a total of 7-8 minutes) until crispy and golden.

  7. Once cooked, place the burgers on a plate lined with kitchen roll to drain the excess oil.
