Tomatokeftedes - Greek Tomato Fritters
Be prepared to be blown away by these delicious Greek tomato fritters 🍅! Crispy on the outside, herby and aromatic on the inside, these Tomatokeftedes are a must-try snack that’s perfect for vegetarians and will leave you craving more.
Ingredients
3 beef tomatoes (approx 650g)
1 courgette (approx 250g)
325g plain flour
1 1/2 tsp baking powder
4 sprigs spring onion, finely chopped
15g fresh mint leaves, chopped
15g fresh basil, chopped
15g fresh parsley, chopped
2 tsp dried oregano
Salt and pepper to taste
1 tbsp olive oil
250ml vegetable oil for cooking

Method
Prepare the tomatoes by chopping half the amount and grating the other half. Set both aside in separate bowls.
Using the same grater, grate the courgette and set aside.
In a bowl, combine the plain flour and baking powder. Create a gap in the middle and add the chopped and grated tomatoes.
Add the chopped spring onions, mint, parsley and dried oregano, along with the salt and pepper and olive oil.
Using your hands or a wooden spoon, gently incorporate the mixture until the flour is well combined.
In a frying over a high heat, heat the vegetable oil. Once the oil is hot enough (it starts to bubble around a wooden spoon), add a tablespoon of the batter. Repeat until there’s no room left in the frying pan.
Cook on both sides for 2-3 minutes until golden brown, and place on a plate lined with kitchen roll to absorb the excess oil. Repeat this process with the rest of the batter.
Season with salt if needed and enjoy warm.
