Kolokithopita- Greek Courgette and Feta Pie

Ingredients

  • 3 courgettes/ 500g

  • 4 sprigs of spring onions, chopped

  • A big handful of fresh dill, chopped

  • 30g fresh mint, chopped

  • 100g plain flour

  • 2 large eggs

  • 2 tsp dried oregano

  • Salt and pepper to taste

  • 200g feta, crumbled

  • 5-6 sheets of filo pastry

  • Olive oil for brushing

  • A square baking dish

Method

  1. In a bowl lined with a tea towel, grate the courgettes. Then squeeze out the excess liquid and drain it from the bowl.

  2. Add the grated courgette back into the bowl, along with the chopped fresh mint, dill and spring onions.

  3. Add the flour, eggs and seasonings and stir to combine well.

  4. Crumble in the feta and mix once again until incorporated, then set aside.

  5. Preheat the oven to 180 degrees Celsius fan. In a pre-greased square dish, add each sheet of filo pastry making sure to brush each one with olive oil.

  6. Spread the courgette mixture and fold in the tops of the filo. Brush again with olive oil and carefully cut the pie into 9 pieces. Bake for 30 minutes or until golden brown.

  7. Leave to cool for at least half an hour before serving.
