Karidopita- Breakfast Walnut Cake

Ingredients
For the syrup:
2 cups of sugar
1 cup of water
1 cinnamon stick
For the cake:
100g sugar
150ml vegetable oil
4 eggs
200g plain flour
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp baking powder
90ml milk
150g walnuts, crushed
Extra oil for greasing a square baking dish
1 hour to prepare and bake | makes 20 pieces of cake
Method
In a saucepan, add the water, sugar and cinnamon stick and place over a medium heat.
Stirring regularly, bring the syrup to a boil and remove from the heat.
Preheat the oven to 180 degrees Celsius fan. To make the cake, begin by whisking the oil and sugar in a bowl and adding the eggs. Whisk until well combined.
To the same bowl, add the flour, spices and baking powder and whisk again to combine.
Mix in the crushed walnuts and milk, and then pour the cake batter into a pre-greased dish (I recommend using a square baking dish). Bake for 40 minutes.
Once baked, pour over the syrup and leave to cool for at least half an hour before serving. (It becomes tastier as it cools down.)
I like to call this the lazy girl version of Karidopita because, unlike other recipes that require separating egg whites and yolks to make a meringue, all you do here is combine the listed ingredients in a bowl along with crushed walnuts, pour into a pre-greased dish, bake for 40 minutes, and drench it with syrup before serving.
