Bougatsa - Greek Filo Custard Pie
Bougatsa is a traditional Greek filo custard dessert made from a few simple ingredients! It’s simple, delicious and leaves your house smelling like a bakery.
Ingredients
2 eggs
100g caster sugar
75g plain flour
500ml semi-skinned milk
1 tbsp vanilla essence
12 sheets of filo pastry
Approx 50g butter, melted (but melt more if needed)
Icing sugar and powdered cinnamon to top
60 minutes to cook | Makes 12 pieces
Method
In a bowl, whisk together the eggs and sugar until frothy. Incorporate the flour and whisk again until combined.
In a saucepan, pour the milk and place over a medium heat. Bring to boil. Then slowly pour the hot milk in the wet mixture and whisk to combine.
Pour this back into the saucepan and heat until the custard thickens. Then cover with cling film and set aside to cool for 15-20 minutes.
Preheat the oven to 170 degrees Celsius fan. In a pre-greased baking dish, add a sheet of filo (fold over in the corner if necessary) and brush melted butter. Repeat this 4-5 more times.
Pour the custard on top of the filo and spread evenly. Then top with a few more sheets of filo, making sure to brush melted butter in between.
Carefully cut the Bougatsa into squares and bake for 20-25 minutes, or until golden brown on top.
Sprinkle icing sugar and cinnamon on top and serve whilst warm.
