Kritiki Salada

Enjoy Kritiki Salada, or Cretan salad, a delicious Greek dish that’s all about freshness and crunchy texture. Perfect as a side or light meal.

 

Ingredients

  • Half a big cucumber, chopped

  • 4-5 medium tomatoes, chopped

  • 1/2 red onion, thinly sliced

  • 1/2 green pepper, thinly sliced

  • 6 barley rusks, roughly crushed

  • 50g feta, crumbled

  • A bit of grated mizithra or halloumi

  • 1 tsp dried oregano

  • 3 tbsp olive oil

  • 2 tbsp red wine vinegar

  • Salt to taste

10 minutes to cook | Serves 1 portion as main or 2 as a starter

Alternatives

Typically, this salad would have mizithra, which is a soft goat cheese, but since that’s hard to find in the UK, you can use halloumi as a substitute.


Method

  1. Add all the chopped veg to a bowl, along with the crushed barley rusks, crumbled feta and grated halloumi.

  2. Add the seasonings and dressing and mix well. Let the dressing settle for a few minutes (the barley rusks will absorb the dressing) and serve.
