Greek Inspired Beans on Toast
Since y’all went wild for my cheesy masala beans on toast, I had to share this lemony, herby Greek-inspired version. It might look a little questionable, but trust me, it tastes absolutely INCREDIBLE 😮💨👏🏻
Ingredients
1 tin of baked beans (I used Aldi’s one that cost me 42p per can
1 tsp dried oregano
1/2 tsp dried thyme
1/4 tsp dried coriander
1 garlic clove, crushed or grated
Approx 1/4 tsp lemon zest
60g feta, crumbled
5-10 mins to make | Serves 2
Method
Tip the baked beans into a saucepan and add all the dried seasonings and garlic.
Place over a medium heat and stir. Once it starts to bubble, add the lemon zest and most of the feta (leaving some for the end to top off the toast). Stir to combine.
Remove off the heat and top on a piece of toast. Enjoy!
