Super Easy Chickpea Curry
I guarantee this SUPER EASY chickpea curry will become your new favourite weeknight meal 😮💨 It requires minimal ingredients and preparation and is so DAMN DELICIOUS 👏🏻

Ingredients
2 tbsp olive oil
1 tsp grated garlic
1 tsp grated ginger
1/2 onion, finely chopped
2 tsp tomato purée
2 heaped tsp mild madras curry powder
500g chickpeas, drained
100ml single cream
15-20 mins to prepare and cook | Serves 2 hearty portions
Method
In hot oil, fry the grated garlic and ginger for about a minute. Then add the chopped onions and cook for a further 2 minutes until softened.
Add the tomato purée and spices, and stir to combine. Reduce the heat and cook until the colour darkens (this cook the spices and take about another 5 minutes).
Add the chickpeas and single cream and stir to combine. Reduce this for a further 5 minutes until the colour darkens and serve whilst warm.
