Creamy tomato orzo
This creamy tomatoey orzo is guaranteed to have you hooked and you’ll know exactly why once you try it!
Ingredients
2 tbsp oil
1/2 tsp garlic granules
1/2 tsp chilli flakes
1 can of chopped tomatoes
1 can of reduced or full fat coconut milk
300g orzo
1/2 vegetable stock cube, dissolved in 400ml hot water
Salt and ground black pepper to taste
20 minutes | Serves 3-4
Method
To a large pan, add the oil and seasonings and place over a medium heat. After no more than a minute, add the chopped tomatoes, coconut milk, orzo and vegetable stock. Stir to combine and cover with a lid.
Cook for a total of 20-25 minutes, removing the lid after 10 minutes and stirring frequently.
Season to taste and serve warm. The orzo lasts for up to two days in the fridge covered.
