Get Laid Chilli

I like to call this my get laid chilli because while it’s not quite “marry me” material (there’s no mince like traditional versions.) It is ridiculously easy, impressively flavourful, and 100% date-night approved 😮‍💨👏🏻

Packed with spices and hearty goodness, this veggie version will have anyone falling in love — at least with your cooking!

 

Ingredients

  • 1 red onion, chopped

  • 2 tbsp olive oil

  • Approx 250g tinned sweet corn, 72p from Aldi

  • 2 tsp Smokey paprika

  • 1 tsp cumin powder

  • 1 tsp chilli powder

  • 1/2 coriander powder

  • 1 tsp garlic granules

  • 2 x cans of black beans, drained - 59p per can from Aldi

  • 2 x cans of chopped tomatoes - 49p per can from Aldi

  • 1 stock cube (use either vegetable or beef stock)

  • Salt to taste

  • Lime juice and freshly chopped coriander

35 mins to prepare and cook | Serves 4


Method

  1. Peel and chop the red onion. In a saucepan with hot oil, add the red onions and cook on a high heat for about 2 minutes until they soften.

  2. Add the sweetcorn, spices and tomato purée. Stir and cook on a medium heat for another 2-3 minutes to release the flavours.

  3. Add the black beans, chopped tomatoes and stock cube and stir to combine. Cook on a low heat for 25 minutes, stirring regularly, until the liquid has reduced and the consistency has thickened.

  4. Optionally, serve with a squeeze of lime juice and fresh coriander 🌿
