The Ultimate Tuna Sweetcorn Sandwich
Here is my favourite (and what I think is the best) way to make tuna sweetcorn. Whether you’re loading it onto toast, wrapping it in lettuce, or eating it straight from the bowl (no judgement), this version takes things to a whole new level! 🐟🌽
Ingredients
3 tbsp canned sweet corn
1 can of tuna (I used the one in spring water and drained it - this cost me 49p from Aldi)
Approx 2 tbsp mayo
1 tsp Dijon mustard
Squeeze of lemon juice
2 sprigs of spring onion, chopped and washed
Salt to taste
1 tbsp olive oil
Pinch of paprika
5 mins to make
Method
Add all the ingredients in a bowl and stir to combine. Tip: chop the spring onions using scissors - I find this a lot easier.
