Kalo Prama - Semolina Cake

Kalo Prama, meaning "the good thing" in Greek, is a semolina cake drenched in syrup that's incredibly moist and delicious. With its spongey texture and sweet syrup infusion, this Greek dessert is sure to become your new favourite treat. Try my family recipe today!

 

Ingredients

For the batter:

  • 3 eggs

  • 1 cup of caster sugar

  • 1 cup of milk & 1 cup of

  • vegetable oil

  • 2 and 1/2 cups of course semolina

  • 2 tbsp baking powder

  • 1 tsp vanilla essence

  • 1/2 cup orange juice

  • Zest of 1 orange

  • Blanched almonds to top

For the syrup:

  • 2 cups of caster sugar

  • 1 cup water

  • 1 cinnamon stick

60 minutes to prepare and cook | Serves 4-6


Method

  1. Preheat the oven to 170 degrees Celsius fan. Grease a square baking dish and set aside.

  2. In a bowl, whisk together the eggs and sugar until frothy. Then add the remaining ingredients listed above and mix until the batter is well combined.

  3. Pour into the greased baking dish and bake for 40-45 minutes until the cake is cooked through.

  4. Meanwhile, add the sugar, water and cinnamon stick in a saucepan over a medium heat and bring to boil whilst stirring.

  5. Once the cake is baked, carefully pour the syrup in top (you will likely need to do this in stages, to allow for the syrup to be absorbed).

  6. Leave to cool before serving and store in the fridge for 3 days.
