Zambonopita

If you’ve never heard of Zambonopita, let this me your sign to try it. It’s a ham and feta cheese pie that’s gorgeously crispy on the outside and soft, almost custardy in the middle 🤤

Ingredients

1 pint (568ml) of full fat milk

3 large eggs

60g melted butter

1 heaped tbsp full fat greek yoghurt

225g plain flour

1 tsp baking powder

1 tsp salt

1 tsp ground black pepper

150g ham, chopped

200g feta, crumbled

1 hour to prepare | Yields 15 slices


Method

  1. Preheat the oven to 180 degrees Celsius fan. In a large mixing bowl, whisk together the milk, eggs, melted butter, and yogurt until small.

  2. Add the dry ingredients (plain flour, baking powder, and seasonings), and whisk again until the batter is pourable. Set the mixing bowl aside.

  3. Place the chopped ham in a cold frying pan over high heat. Sauté for 4-5 minutes until fragrant and golden. Then add to the batter along with the crumbled feta.

  4. In a 35cmx25cm baking tray lined with parchment paper, pour the mixture. Bake for 45-50 minutes until golden brown on top.

  5. Leave to cool for 10 minutes before slicing and enjoying.
