Vasilopita - Greek New Year's Cake

Celebrate the New Year with Vasilopita, a traditional Greek New Year’s Day cake! This light and fluffy cake hides a lucky coin that is said to bring good fortune to the person who finds it. A sweet way to start the year! 🎉

 

Ingredients

  • 1250g butter

  • 250g sugar

  • 4 eggs

  • 350g self raising flour

  • 1/2 tsp mahaleb

  • 1/2 tsp vanilla powder

  • 1/4 tsp nutmeg

  • 1/2 tsp cinnamon

  • 100ml milk

  • Zest of 1 orange

1 hour 30 mins to prepare and bake | Serves 8 slices


Method

  1. Preheat the oven to 170 degrees Celsius fan. In a bowl, add the sugar and butter and beat for 5 minutes until light and fluffy.

  2. Add the eggs and continue beating for another 2 minutes until fluffy.

  3. Add the flour, spices, vanilla and milk to the wet ingredients and whisk until incorporated.

  4. Fold in the zested orange using a spatula.

  5. In a pre-greased circular cake tin, pour the cake batter.

  6. Optionally, wrap up a pound coin in foil and hide it in the cake batter.

  7. Bake between 1 hour to 1 hour and 15 minutes until the cake has fully baked (you can test this by poking a knife inside and seeing if it comes out clean).

  8. Once the cake has been baked, remove it from the cake tin and sprinkle icing sugar.
