Tiganites - Greek-style Fluffy Pancakes

Tiganites – delicious, honey-drenched morsels that are a bit like Loukoumades but in pancake form! 🥞 These fluffy Greek-style pancakes, topped with crushed walnuts make a fantastic alternative to traditional American pancakes. A must-try for any pancake lover!

Ingredients

  • 1 cup tepid water

  • 1 tbsp sugar

  • 1 tsp dried yeast

  • 1 tsp vanilla powder

  • 1 cup plain flour

  • Pinch ground cinnamon

  • Olive oil for shallow frying

  • Honey & crushed walnuts to top

30 mins to prepare and cook | batter makes approx 8-10 small tiganites


Method

  1. Add the tepid water to a bowl and combine the sugar, yeast and vanilla powder. Whisk until frothy.

  2. Add the plain flour and ground cinnamon and whisk once again for a few minutes until the batter is well combined.

  3. In a frying pan, heat up the olive oil over a medium heat. Once the oil is ready (you can tell by placing a wooden spoon in the oil and seeing if the oil foams around it), add about a tbsp of the batter. Shallow fry for 2 minutes on both sides or until lightly golden.

  4. Remove and place on a plate with kitchen roll to drain the excess oil. Repeat with the rest of the batter.

  5. Top with honey and crushed walnuts to serve.
