Sweet Tahini Flatbreads

Since you’ve been loving my stuffed flatbreads, I thought I’d switch things up with a sweet tahini filling inspired by my tahinopites recipe. These flatbreads are a perfect combination of soft dough and a sweet, nutty tahini filling that’s sure to satisfy your cravings!

 

Ingredients

  • 300ml tepid water

  • 8g instant yeast

  • 1 heaped tsp honey

  • 500g white bread flour

  • Pinch of salt

  • Extra flour for dusting

  • Olive oil for pan frying

    For the filling:

  • 120g tahini

  • 100g caster sugar

  • 2 tbsp carob syrup

  • 1 tsp cinnamon

1 hr 30 mins to prepare and cook | Yields 8 flatbreads


Method

  1. Combine the yeast and honey in the tepid water and whisk until frothy.

  2. Mix in the flour with a wooden spoon, then knead using a standing mixture or by hand for 2-3 minutes. Add the pinch of salt and continue kneading to incorporate.

  3. Once the dough is firm, leave it in a bowl and cover it with a clean tea towel. Set this aside to rise for half an hour.

  4. Meanwhile, prepare the tahini filling by combining all the ingredients together in a bowl.

  5. Divide the dough into 8 even pieces and roll to form balls. Place a tbsp of the sweet tahini mixture into the middle of the flattened dough ball.

  6. Flatten each ball with a rolling pin to form the flatbread shapes and using your fingertips, create dimples in the dough.

  7. Brush the frying pan with a little bit of olive oil over a medium heat. After a minute, add one flatbread in and cook on both sides for 1-2 minutes, or until golden, and flipping half way through. Repeat this process with the rest of the flatbreads, making sure to add a drizzle of oil to the pan each time.

  8. Serve warm.
