Garides Saganaki - Prawn with Tomato & Feta
Garides Saganaki is a much-loved Greek dish that’s been one of the most requested in my series, and for good reason! Cooked in a rich, garlicky, tomatoey sauce, this delicious prawn dish is flavourful, aromatic, and irresistible.
Ingredients
2-3 tbsp olive oil
330g jumbo king prawns, uncooked
1 red onion, chopped
2 sweet pointed peppers, seeded and chopped
400g chopped tomatoes
30g tomato purée
3 garlic cloves, grated
1/4 - 1/2 tsp chilli flakes
1 tsp paprika
20ml ouzo (optional)
Salt and pepper to taste
100g feta, crumbled
A handful of fresh parsley

Method
Start by heating up half of the olive in a frying pan over a high heat. Add the prawns one by one and cook on both sides for no more than one minute, or until they turn white. Remove from the pan and set aside.
In the same pan, add the chopped red onion and red pepper and cook for 5 minutes until they soften. Add more oil to the pan if needed.
Once softened, add the chopped tinned tomatoes, tomato puree, seasonings and ouzo. Continue cooking on a high heat for another 5 minutes until the sauce has reduced and thickened.
Add the prawns back to the pan and stir to combine. Cook for a further minute before removing off the heat and topping with crumbled feta and chopped parsley.
