Pourgouri - Bulgar Wheat Pilaf

Ingredients
1 red onion, grated
4 beef tomatoes, grated
1-2 tbsp extra virgin Greek olive oil
1 tbsp tomato purée
60g vermicelli noodles
100g bulgar wheat
Salt to taste
Black pepper to taste
2 cups water
20-25 mins to prepare and cook | Serves 3-4
Method
Start by grating the onion and tomatoes.
In a saucepan over a medium oil heat, heat the olive oil and then add the grated onions and cook for a minute to soften, then add the grated tomato and cook for another 2-3 minutes.
Stir in the tomato purée, seasonings, vermicelli noodles, bulgar wheat and water. Partially cover the saucepan with a lid.
Lower the temperature and leave to cook for 10-12 minutes until the liquid reduces and the texture is silky.
Serve with Greek yoghurt.
