Pourgouri - Bulgar Wheat Pilaf

Learn how to make Pourgouri, a hearty Greek-Cypriot bulgur wheat dish that's perfect as a side or main. This irresistibly moorish recipe is quick, easy, and guaranteed to become your new favourite go-to dish.

 

Ingredients

  • 1 red onion, grated

  • 4 beef tomatoes, grated

  • 1-2 tbsp extra virgin Greek olive oil

  • 1 tbsp tomato purée

  • 60g vermicelli noodles

  • 100g bulgar wheat

  • Salt to taste

  • Black pepper to taste

  • 2 cups water

20-25 mins to prepare and cook | Serves 3-4


Method

  1. Start by grating the onion and tomatoes.

  2. In a saucepan over a medium oil heat, heat the olive oil and then add the grated onions and cook for a minute to soften, then add the grated tomato and cook for another 2-3 minutes.

  3. Stir in the tomato purée, seasonings, vermicelli noodles, bulgar wheat and water. Partially cover the saucepan with a lid.

  4. Lower the temperature and leave to cook for 10-12 minutes until the liquid reduces and the texture is silky.

  5. Serve with Greek yoghurt.
