Kourabiedes - Greek Christmas Cookies
It wouldn’t be a Greek Christmas without Kourabiedes. These traditional Greek Christmas cookies are soft, buttery, and dusted with icing sugar, resembling snowballs🍪☃️ Perfect for festive celebrations, these delightful treats can be cut into any shapes you like!
Ingredients
1 cup corn oil
1 & 1/2 cups trex, melted (plus extra if needed)
2 1/2 tsp vanilla
3/4 cup icing sugar, sieved
1 egg yolk
1 cup crushed almonds
6 cups plain flour
1 tbsp brandy (or more depending on preference)
Plus extra icing sugar for dusting at the end
50-60 mins to prepare and bake | Yields 35 to 50 cookies, depending on size and shape
Method
In a large mixing bowl, add the oil, melted trex, brandy, vanilla, sieved icing sugar and egg yolk, and mix until everything is combined using a spoon or whisk.
Add the crushed almonds and plain flour to the wet ingredients and mix to incorporate.
Taking a tbsp of the mixture, or rolling it out, cut the pastry into the desired shape (this could be circles, crescents, thumbprints, or any other shape)
Lay them out on a baking tray lined with parchment paper and bake for 20 minutes at 150 degrees Celsius, or until lightly golden brown.
Once baked, leave them to cool on a wiring rack for 10-15 minutes. Then transfer to a tray and dust them in plenty of icing sugar until they’re fully covered.
