Tahinopites - Sweet Tahini Treat
Indulge in Tahinopites, the most incredible sweet tahini treat! This traditional Greek-Cypriot pastry is filled with a rich blend of tahini, carob syrup, sugar, and cinnamon. Making them from scratch takes me right back to the bakeries in Cyprus 🥹. You will be OBSESSED once you try them!
Ingredients
8g dried yeast
300ml tepid water
1 tsp honey
500g plain flourPinch of salt
Extra flour for rolling the dough
For the filling:120g tahini
100g caster sugar
2 tbsp carob syrup
1 tsp cinnamon
Honey, melted

Method
In a bowl, whisk together the yeast, tepid water and honey until combined.
Mix in the flour and using a standing mixer or by hand, knead the dough for 2 minutes until the flour is fully incorporated.
Add the pinch of salt and knead the dough for a further 1 minute. Add the dough to a bowl, sprinkle some flour on top and cover. Place in a dark and warm spot and leave to rise for at least an hour until it doubles in size.
Preheat the oven to 179 degrees Celsius. Remove the dough and add to a floured surface. Divide into equal portions of 8. Flatten each dough ball using the palm of your hand.
In another bowl, mix together the tahini, sugar, carob syrup and cinnamon. Place a tbsp worth of this mixture into the middle of the flattened dough ball. Carefully roll the dough to form a log and twist it from both ends to bind the filling. Then roll from one end to form a spiral. Repeat with the remaining dough and filling.
Place on a baking tray with parchment paper and bake at 170 degrees Celsius fan for 23 minutes until lightly golden.
Lightly wash the tops of the tahinopites with melted honey and enjoy whilst warm. Serve these warm for maximum enjoyment (you can reheat them in the oven or air fryer).
