Spanakorizo - Greek Spinach Rice

Ingredients
5 sprigs of spring onion, sliced
A big handful of fresh dill, roughly chopped
A big handful of fresh mint, roughly chopped
2 tbsp olive oil
1 cup of long grain rice, washed
2 cups of veggie stock (using 1 cube of veggie stock)
450g fresh spinach
1/2 lemon, squeezed
Crumbled feta to topSalt and pepper to taste

Method
Start by prepping all the spring onions and fresh herbs by washing and roughly chopping.
In a saucepan with hot oil, add the chopped veggies and place over a medium heat. Cook for 2-3 minutes until softened, stirring throughout.
Add the washed rice and veggie stock, and cover the saucepan with a lid. Place over a low heat for 15 minutes, until two-thirds of the liquid has reduced.
Incorporate the spinach into the rice in batches, stirring throughout. Repeat this and cook on a low heat until the spinach has wilted and the liquid reduced. This will take about 15 minutes.
Add the lemon juice, season with salt and pepper and serve with crumbled feta on top.
