Feta me sousami
Let me introduce you to my favourite saganaki variation of the series yet - feta me sousami, aka feta with the crispiest coating of sesame seeds, shallowed fried to golden perfection.
Ingredients
200g feta, 1 block
50g plain flour
1 medium egg, whisked
50g sesame seeds
100ml vegetable oil
2-3 tbsp Greek honey - or a thick honey
20 minutes to prepare | Serves 2-4 as an appetiser
Method
Set out two plates and a bowl. In the plates, place the flour and sesame seeds separately. In the bowl, whisk the egg to a frothy consistency.
Dredge the feta in the flour first, then the egg wash, then again in the flour, and finally the egg wash one more time. Make sure to cover all sides evenly each time.
Coat the feta in sesame seeds, covering all sides.
In a frying pan over a medium high heat, add the oil. Leave to heat up for 2-3 minutes, or until it begins to foam if you place a wooden spoon in.
Shallow fry the feta on both big sides for about 2 minutes until golden brown, and then on all four small sides for about 20 seconds each. Total cooking time should be no longer than 5 minutes.
Once fried, serve with honey drizzled on top and enjoy warm.
