Skordalia - Greek Garlic and Potato Dip

Try Skordalia, a creamy, garlicky mashed potato dip that's perfect as an appetiser! This traditional Greek recipe is so easy to make and incredibly delicious. A must-try for garlic lovers!

 

Fun fact: the word Skordalia gets its name from the Greek work ‘skordos’ which means garlic 🧄

 
A creamy, garlicky mashed potato dip, typically served as a Greek appetiser, garnished with chopped spring onion and parsley.

Ingredients

  • 1 large beef tomatoes or 2 medium ones, sliced

  • 200g feta, crumbled

  • 30g grated kasseri/ mozzarella/ gruyer

  • Approx 2 tbsp chopped roasted red peppers from a jar

  • 1-2 picked green chilli, chopped

  • Sprinkle of dried organic

  • Drizzle of olive oil

30-35 mins to prepare and cook | Serves 2 hearty portions


Method

  1. Boil the chopped potatoes until fork tender then drain and set aside. (It’s important to leave the potatoes to cool as this draws out the moisture.)

  2. Prepare the dressing by blitzing together the garlic, vinegar, olive oil and salt until thick and creamy.

  3. Add the boiled potatoes to a boil and mash until smooth, then mix in the dressing.

  4. Garnish with chopped spring onion and parsley.
