Gliko Karpouzi - Watermelon Jam

Perfect for summer spreads or gifting, you’ll fall in love with this simple yet incredible recipe.

 

Ingredients

  • 400g Watermelon rind, chopped and blended

  • 100g caster sugar

30 mins to prepare and bake | Makes 1 small jar


Method

  1. Gather 400g worth of watermelon rind by slicing off the green and pink bits off the watermelon. Chop into small pieces and place into a blender to blend for no more than 10 seconds until the consistency is mushy.

  2. Pour into a large saucepan over a medium heat and stir for 2-3 minutes. Then stir in the caster sugar.

  3. Continue stirring over a medium heat for 25-30 minutes minutes. The rind will reduce and begin to form a pinky orange colour.

  4. Reduce the temperature for a further 10 minutes to allow the jam to thicken and darken in appearance.

  5. Leave to cool. Meanwhile, sterilise the jam jar with hot water before storing the jam.
