Fava - Yellow Split Pea Dip

If hummus had a sexy Greek counterpart, it would definitely be this lemony and unbelievably creamy yellow split pea dip, known as Fava Dip.

Made with yellow split peas, olive oil, and fresh lemon juice, this smooth and hearty dip is perfect with warm pita or crusty bread—and it's packed with protein!

 

Ingredients

  • 1 red onion, chopped

  • 2 tbsp olive oil

  • 3 cloves garlic, crushed or grated

  • 220g yellow split peas

  • 720ml hot water

  • I tsp dried thyme (or fresh thyme or you have)

  • 2 bay leaves

  • 1 vegetable stock

  • Salt to taste

  • 1 lemon, juiced

  • Additional olive oil for serving

  • Sprinkle of paprika for serving

35-40 mins to prepare and make


Method

  1. Start by chopping the red onion. In a saucepan with olive oil, saute the red onion over a medium heat for 2-3 minutes until softened.

  2. Add the grated garlic, yellow split peas, seasonings, water and stock cube. Place over a low to medium heat for 25 minutes, or until the stock has reduced and the yellow split peas have mostly softened (don’t worry if they’ve got some bite to them still because everything will be blended).

  3. Remove off the heat and stir through the lemon juice.

  4. Place in a blender or food processor and blitz until thick and creamy.

  5. Serve on a plate with a drizzle of olive oil and a sprinkle of paprika. Best enjoyed with flatbread or pitta.
