Marry me chicken orzo

Marry me chicken orzo

Ingredients

2 tbsp oil (recommend using the oil from the jar of sundried tomatoes)

1 red onion, finely chopped

2 garlic cloves, grated

1 heaped tsp paprika

2 heaped tsp dried oregano

2 tbsp tomato puree

600g boneless chicken thighs, diced

300g orzo

Approx 15 sundried tomatoes, finely chopped

300g full fat cottage cheese

500ml veg stock (plus extra if needed)

Salt and pepper to taste

Approx 50g Parmesan cheese, grated

Handful of fresh basil chopped



Method

  1. To a frying pan, add oil and place over a medium heat. After a minute, add the chopped red onion and sauté for 2-3 minutes until softened, making sure to stir continuously.

  2. Add the seasonings, tomato puree and grated garlic, and stir through for a minute, before adding the diced chicken to the pan and cooking for 5 minutes or until the chicken has turned white.

  3. Add the orzo, chopped sundried tomatoes, cottage cheese, stock, and mix until combined. Lower the heat and cover the saucepan with a lid. Cook for 12-15 minutes, stirring regularly.

  4. Once the liquid has reduced, remove the lid and stir through the grated Parmesan cheese and fresh basil. Cook for a further minute before serving.
