Spanakopita dip

The spanakopita dip that you NEED to have this festive season… and just all year round generally, because it’s that delicious! Try it out for yourselves and thank me later.

Spanakopita dip

Ingredients

2-3 tbsp extra virgin olive oil

1 leek, chopped

480g spinach

200g full fat cream cheese

200g feta, crumbled 

100g medium cheddar, grated

50g fresh, dill chopped

1 1/2 tsp ground cinnamon

1/4 tsp ground nutmeg 

Salt and ground black pepper to taste

45 minutes to prepare | Serves 6-8


Method

  1. Heat up the olive oil in a saucepan over a medium heat. After 2 minutes, add the chopped leek and sauté for 2-3 minutes until softened.

  2. In batches, add the spinach and close the saucepan with a lid to allow it to wilt, stirring frequently. Repeat until all the spinach has wilted.

  3. Add this mixture to a bowl along with the rest of the ingredients. Mix until well combined.

  4. Place in an oven safe dish to bake at 180 degrees Celsius fan for 25-30 minutes until lightly golden brown on top and the consistency is perfectly gooey.
