Chicken gyros bowl

This Chicken gyros-inspired bowl packed a whopping 40g protein per serving — served with my legendary tzatziki that’s even higher in protein Optional: I like to serve it on a bed of crispy chips with sliced red onion and vine tomatoes on the side, so it’s basically like a deconstructed gyros!


Ingredients

For the chicken

1 tsp ground cumin 

1 tsp ground coriander 

1/2 tsp ground cinnamon 

2 tsp dried oregano

1 tsp paprika 

100g 0% fat Greek yoghurt 

1/2 lemon, juiced 

2 tbsp olive oil 

Salt to taste 

600g boneless chicken thighs 

For the tzatziki 

500g 0% fat greek yoghurt 

4 baby cucumbers, grated and drained 

40g fresh dill, finely chopped 

2 tsp dried mint 

2 tsp dried oregano 

1/2 lemon, juiced

2-3 tbsp extra virgin olive oil, plus extra to top 

About 1 tsp salt, or salt to taste 

Pinch of paprika to top

Method

  1. In a large mixing bowl, combine all the ingredients for the chicken marinade.

  2. Coat the chicken well and airfry at 185 degrees Celsius for 16-20 minutes, turning halfway through. (Time to cook depends on size of airfryer basket and if there’s enough space between the chicken pieces.)

  3. Meanwhile, prepare the tzatziki and your choice of carbs. I went for chips, which I airfried for 10 minutes, along with thinly sliced red onion and chopped vine tomatoes.
