Chicken parmesan skewers

Ingredients

For the skewers

300g boneless chicken thighs, cubed

1 tsp dried oregano

1 tsp Smokey paprika or ordinary paprika

1 tsp garlic powder

1 tsp onion granules

Salt and ground black pepper to taste

1 1/2 tbsp extra virgin olive oil

For the butter

30g butter, at room temperature

2 garlic cloves, grated/ crushed

30g Parmesan cheese, grated, plus extra for grating on top

A small handful of fresh parsley, finely chopped

Method

  1. Begin by soaking the wooden skewers in water. This stops them from burning in the airfryer. Make sure to cut the wooden skewers so that they fit horizontally in the airfryer tray.

  2. Coat the diced chicken in all the seasonings and olive oil. Mix well.

  3. Thread the chicken cubes onto the skewers — about 4/5 cubes onto each one.

  4. Airfry for 12-13 minutes at 190 degrees Celsius, turning halfway through.

  5. Meanwhile, prepare the garlic butter by mixing together all the ingredients listed above. Once the skewers are cooked, brush them in the butter mixture and serve with more grated Parmesan.
